HY-VEE RECIPE OF THE MONTH

Veggie Frittata

You Will Need

1 egg

2-4 spinach leafs

¼ – ½ cup bell pepper, diced

¼ – ½ cup zucchini, diced

Cheddar cheese

Salt and pepper to taste

 

This is so eeeasy! In a microwave safe bowl or mug, crack open an egg and whisk until blended. Add the spinach, bell pepper, zucchini, and spices. Place in the microwave for one minute or until egg is light and fluffy. Top with cheese and enjoy!
